Listeria monocytogenes inhibition in meat slurry by in situ produced lactocin 705.

Lactobacillus casei CRL705 can release a bacteriocin, lactocin 705, active against listeria monocytogenes. MRS broth was inoculated with spectinomycin-resistant (Spcr), bacteriocin-producing (Bac+) Lactobacillus casei CRL705 strain and a polymixyn B resistant (Polr) Listeria monocytogenes strain. Viable counts of listerias decreased rapidly from 5x103 to 10 cells/ml, whereas its growth was not affected by a bacgteriocin-negative variant of L. casei CRL705. The assessment of bacteriocin affectiveness in a meat slurry showed that L. monocytogenes did not multiply during the experimental period of time suggesting that lactocin 705 has a bacteriostatic effect.
