Resumen:
Although no known risks on human health havebeen reported, genetically modified (GM) microorganismsshould be evaluated from a biosafety point ofview before considering their insertion in the humanfood chain. The object of this work was to evaluate thebiosafety of GM lactic acid bacteria (GM-LAB) using ananimal model.Mice received a high concentration of GM-LABor a native strain during 30 days and different healthparameters were evaluated. The GM-LAB did not produce adverse effectson health of recipient animals as shown by normalgrowth, haematological values and other physiologicalparameters evaluated in this study. From these results, we can suppose that theGM-LAB used in this study are just as safe forconsumers as the native strains from which they werederived.
