Resumen:
Intestinal health requires the balanced
coexistence of eukaryotic cells with the gut
microbiota. Probiotic lactobacilli and
bifidobacteria are increasingly recognized as a
way to prevent and/or treat intestinal disorders.
Commercial probiotic bacteria are delivered
mainly as frozen or freeze-dried cultures.
However, spray drying is a lower cost technology
that could be used for the production of
probiotic cultures. The aim of this study was to
compare the effect of fresh and spray dried
bifidobacteria cultures on their ability to
prevent experimental colitis and protect against
Salmonella Typhimurium infection in mice.Both Bifidobacteria strains studied were able to rescue
mice from colitis and to exhibit similar anti-inflammatory
potential given either after fresh culture or spray drying.
Similar effects were also observed against Salmonella
infection.
These results indicate that spray drying arises as a
promising technology for the development of dehydrated
cultures as a lower cost alternative to freeze-drying.
