Resumen:
The exploration of new renewable sources and non-traditional sources of hydrocolloids as alternative to traditional additives products has been studied in the last years. The gum presence in the Gleditsia triacanthos seeds has been reported1. Regarding Gleditsia triacanthos studies, reserchers2 have concluded that the fraction of galactomannans extracted with hot water treatment could be a potential additive in food industry. The aim of this work was to evaluate the effect of the starch substitutions with the extract obtained from the endosperm of Gleditsia triacanthos seeds on the dispersion viscosity-profiles and gel texture properties. The starch partial substitution by the extract from Gleditsia triacanthos improved the viscosity profiles during heating and cooling. The gel brittleness/elasticity was not strongly modified by Gledi. The Young?s Modulus of the gel structure was not affected; however, gel strength was reduced as a consequence of partial replacements.
