Resumen:
Our proposal is to analyze the production strategies and the bioactive properties of compounds or biomolecules derived from whey (such as galactooligosaccharides, lactosucrose, glycomacropeptide, GABA and antioxidant peptides) and the use of whey as encapsulating material of biolipids, with a view to obtaining functional ingredients.
