Resumen:
Thus, the present investigation wasaimed at evaluating the effect of the galactomannan fraction extracted from Gleditsia triacanthos seeds in combination with soy protein isolates (SPI) on the development of biodegradable and edible films. For this study, SPI was chosen as the base material due to its favorable filmogenic properties, low cost and its capability to produce films with good morphological, physicochemical and mechanical properties, with respect to other protein materials extracted from other available sources (Denavi, Pérez-Mateos, Añón, Montero, Mauri, & Gómez-Guillén, 2009). In the search for novel materials, the findings of the present study will contribute to the knowledge about the use of renewable sources of galactomannans as alternatives to the traditional ones and/or as an option to non-biodegradable and inedible components.
