Resumen:
The effect o f l e c i t h i n s on wax c r y s t a l l i z a t i o n in sunflowerseed oil was studied. The r e s u l t s showed t h a t t h e presence o f l e c i t h i n s does n o t modify t h e nucleation stage, but decreases t h e c r y s t a l l i n e size.
