Resumen:
The effect of UV-C light on linear viscoelastic characteristics of fresh-cut apple slices was analyzed by dynamic oscillatory shear and creep tests. The storage modulus (G’) was lower in irradiated samples than in fresh fruit. The instantaneous compliance (J0), retarded compliances (J1 and J2) and steady-state viscous compliance (1/hN) increased after 7 day storage at 4-5ºC in treated samples. The rheological response of apple tissue was correlated with microstructure and ultrastructure features.
