Resumen:
The analysis of experimental concentarion profiles in apple tissue after osmotic dehydration treatment showed that the establishment of a fully developed profile requires a time longer than thet usually employed in industrial processes. A general equation developed from the concept of Advancing Disturbance Front (ADF) was proposed to describe the kinetics of concentration changes in a previous work. In the present communication, a mathematical analysis of this equation has been carried aout to obtain derived equations that allow to calculate concentration gradients and the corresponding net fluxes as well as the effective diffusivities at the interface. The model was validated using experimental data from osmosed apple tissue and a good agreement was obtained
