Proteolysis plays a key role for the growth of Lactobacillus acidophilus in milk

Resumen:
Proteolysis and growth characteristics in skim milk of three strains of Lactobacillus acidophilus were determined. The strain CRL 800 showed the highest proteolytic activity (A340=0.51) while CRL 640 had the lowest one (A340=0.20) after 24 h of incubation. On the whole, the microorganisms preferentially degraded whey proteins whereas k-casein was hardly hydrolyzed. The rate and extent of the a- and b-casein breakdown was dependent on the strain under study.
