Resumen:
A cell-envelope proteinase from Lactobacillus helveticus CRL 1062 was
characterisated. The enzyme was not released from washed cells in absence of
calcium. It had maximum activity at pH 6.5-7.0 and 42°C. The enzyme hydrolysed
a- and b-caseins
with different degradation
rates. Activity was strongly inhibited by PMSF, suggesting the enzyme is a
serine-type protease.
