Latin - American crops include a wide variety ofvegetable species such as quinoa, kañiwa, maize, amaranth, chia, Sach Inchi,legumes which present a growing interest for consumers due to their impact inhealth and nutrition. The application of processing technologies on seeds andgrains is mainly related to the separation of the main components according totheir own characteristics. The influence of the operative conditions ondifferent types of milling, conventional and emergent methodologies of oilextraction, production of different types of residual flours and the isolationof proteins, insoluble and soluble dietary fiber and starches are extensivelysummarized. The characterization of the different fractions in terms of theirtechno-functional properties were also described for each crop. This chapterprovides interesting information that contributes to the revaluation ofthese species and the improvement of the final quality of food products.
