Abstract: We studied the influence of soy protein concentration, and the hydrolysis on kinetic adsorption to the air-water interface and the effect of polysaccharides addition. A sample of soy protein isolate and one hydrolysate of 5.4% at 2, 10-2 and 10-3%wt/wt of concentrations were used. The polysaccharides used at 0.25%wt/wt of concentration were hydroxypropylmethycellulose and lamda carrageenan. The dynamic surface pressure of films were evaluated. We determined the kinetic parameters which determined the adsorption, penetration and rearrangement rates of samples and mixed systems. The rates tendency as protein concentration increase seems to be governed by the type of polysaccharide addition, and its relative concentration with the protein. In other hand, on the rearrangement step, the type of polysaccharide and the structure and concentration of protein together would lead to modified the film properties at long times of adsorption.
