YM is known to be rich in bioactive compounds; mainly the leaves contain phenolic acids, flavonoids, caffeine, theobromine, theophylline, carotenoids, and saponins. These compounds have positive biological activities acting on cholesterol levels reduction, lipids, and glycemic control, restoring the body's redox balance, as cardioprotectives and stimulants on the central nervous system. Hence, there is a growing interest in YM products, and an increasing number of YM products are being developed as a result. In this chapter, the goal is to summarize YM characteristics, chemical components, and their health effects; in addition, methods of extraction and encapsulation of YM bioactive compounds employed for improving them for their application in food products are also reviewed.
