Resumen:
In this work different examples of modeling and numerical simulation of heat transfer in food engineering using the finite element method in irregular domains are described. The first example refers to the thermal treatment of meat products with simultaneous inactivation of Ecoli O157: H7 associated with hemolytic uremic syndrome. Subsequently, two stages of marine crabs processing are analyzed: i) the initial thermal treatment to achieve the release of muscle tissue attached to the exoskeleton, which requires denaturation of myofibrillar proteins; ii) freezing of irregular food systems in which thermalproperties vary strongly with temperature; also a change of variables (enthalpy and Kirchhoff function ) were used to obtain the solution.
