  There is an increasing interest in the role of food materials in enhancing the nutritional value of foods and in preventing diseases. Milk proteins can bind a variety of molecules and ions at different degrees of affinity and specificity. beta-lactoglobulin (beta-lg) is the major protein in whey and it is an important protein for food industry because of its high nutritional value, and its functional properties. Folic acid (FA), a water soluble B vitamin is required for several fundamental biological processes, and is an essential component of the diet. The objective of this work was to construct and characterize beta-lg/FA nano-complexes and study their functionality at the air-water interface at pH 7 and 5. Size particle distribution of the nano-complexes was determined by dynamic light scattering. Their interactions at the air¨Cwater interface were determined by monitoring the dynamics of surface pressure (pi) with an automatic drop tensiometer. FA induced beta-lg aggregation. The interfacial activity was slightly enhanced at pH 7, while was detrimental at pH 5, beta-lg isoelectric point. These results have practical implicances as these nano-complexes could be incorporated to different disperse food matrixes.
