Resumen:
The effects of gaseous permeability of the fiim and storage temperature (0º and 4°C) on the microflora of refrigerated beef were analyzed; total aerobic counts, anaerobic counts, Pseudomonas sp.,Brochothrix thermosphacta, Lactobacillus sp., Enterobacteriaceaeand yeasts were determined as functions of time. Storage periods to reach a total count of lo7 CFU/cm2 were established for different conditions. Microbial growth was modeled by mathematical equations in terms of initial contamination, growth rate and length of the lag phase for each component of the mixed flora.
