In recent years the interest in biodegradable materials has notoriously increased for it use in coatings, packaging, agriculture (for grains and seeds coatings), medicine (drug encapsulation for controlled release), etc. . The development of biodegradable polymer coatings from natural materials (renewable sources) reduces the need to synthesize polymers, eliminating the negative effects on the environment. One disadvantage that occurs when using natural materials, is that they have poor mechanical properties that results insufficient for coatings developments. In this research, the studies were carried out on the modification of a material obtained from a natural source such as the soy protein isolate (SPI). This starting material is very suitable because of the large production in our region, and also can be isolated from waste that produce the oil industries. This modification consists in a crosslinking using genipin (Gen) (natural product derived from a type of jasmine called Gardenia Jasminoides Ellis) and glycerol (Gly) as a plasticizer.
