We
had tested many models in order to study the diffusion process in green table
olives. We studied thin-plate model, a model of hollow sphere and a hollow
cylinder model. All they were consistent in order to determine the order of
magnitude of the effective diffusion coefficient, but they none fits exactly to
the shape of the geometry of the fruit. We can classify the olives by their
shape in ovoid, spherical, elongated and elliptical. Right now we are presented
a model in elliptic coordinates that can describe the ovoid olives as
elliptical olives. The effective diffusion coefficient of elliptical coordinates
to soda is around 10-10m2 / s for
olives debittered with 2.5% NaOH. The results obtained were consistent with the
values obtained in other models, thus validating this new data model.
