The proposal to be developed in the present work is part of an investigation on the phenomenon of arsenic diffusion in Daucus carota. From a predominant varietal crop in the Province of Mendoza, a selection of that varietal was made based on its shape, length, and top diameter. Tests were carried out on the cooking time of the samples, taking as an indicator a degree of tenderness between 2 and 4 kgcm-2, where this value was reached after 30 minutes at a cooking temperature of 98ºC. The method of obtaining sub-samples to carry out the acid pretreatment, prior to the quantification of arsenic, was also studied. For this purpose, several wet mineralization techniques were tested with different proportions of acid mixtures. The nitric-hydrochloric acid digestion technique was optimal for the plant matrix studied and because it used fewer acids. The phenomenon of arsenic diffusion in sub-samples was verified in an experiment carried out at 98°C for 40 minutes, with agreement between the levels of arsenic concentration depending on the height of the cut and radial distance.
