Resumen:
In the last years, changes in eating habits have promoted the generation of products that add multiple benefits, medicinal or physiological, to the health of those who consume them. Among these products, D-tagatose stands out, a sweetener considered a good substitute for sucrose due to its similarity in flavor, with a low caloric content, high sweetness, in addition to not promoting residual taste in foods.D-tagatose can be obtained, by enzymatic route, through D-galactose isomerization reactions, catalyzed by L-arabinose isomerase (L-AI). However, in addition to the lack of commercial availability of L-AI, the high cost associated with the use of the conventional inducer, isopropyl β-D-1-thiogalactopyranoside (IPTG), in culture media, has made its production on a commercial scale unfeasible. Within this scenario, this study aims to present viable conditions for obtaining the enzyme L-arabinose isomerase from Enterococcus faecium DBFIQ E36 in Escherichia coli BL21 (DE3), in a benchtop bioreactor, using an alternative inducer, lactose, through the process of auto-induction
