Resumen:
Yeast cell wall (YCW)is composed principally by β-glucans and mananoproteins (1). Among theexceptional properties of β-glucans it wasreported its capacity to form films with promising characteristics (2,3). Theuse of YCW for such applications, agrees with the interest of revalorization ofindustrial residues since it is a byproduct of the yeast extract industry. Thedevelopment of active materials to increased food shelf-life by the addition ofantioxidants and antimicrobials agents is an important trend of innovations infood industry. Thymol is present in thymeand oregano essential oils, with antibacterial, antifungal and oxidantproperties (4). Antimicrobial packaging is among the more promising forms ofactive systems aimed to protect food products from microbial contamination.
