Resumen:
Yeast biomass contains biopolymers of great interest to generate suitable films for food packaging. Yeast biomass, in particular, is formed by a soluble fraction corresponding to the cytoplasm, composed by numerous proteins, sugars, and low-weight compounds available for formation of a structured matrix; on the other hand, the insoluble fraction is represented by the cell wall, composed mainly of β-glucans and proteins linked to mannans1, this fraction possesses numerous properties and one is the ability to form a continuous and resistant matrix2. In this work, the effect of the combination of soluble (S) and insoluble (I) fractions on the characteristics of plasticized films based on yeast biomass was studied.
