Resumen:
A study on the production and consumption of fresh-cut produce or minimally processed vegetables (VMP) in Argentina was performed. This issue becomes more important if one considers that consumption of fruits and vegetables in Argentina is insufficient and is half as suggested by FAO and WHO. The market development is still limited and as in other countries and their development wasaccompanied by distribution through supermarkets and institutional buyers. At present, approximately 60- 70% of the VMP is sold through supermarkets and 35% in the HoReCa channel distribution. Regarding the size of the manufacturing companies there are large volumes of business and highly technical to smallcraft businesses. The recipients of these products belong to a medium / high socioeconomic status, being considered this a major factor that population density for marketing. For the consumer are key comfort features of the product, including the characteristics of the container and the time savings involved intheir use, having great weight in deciding the brand of the product offered. It is suggested to access markets with a recognized brand, offering assortments and quality products. The main areas for improvement to increase the consumption of these products nationwide are: Provide intensive and continuous information; Maintaining the cold chain; Suggest new products and presentations; Attractive,fairly presented in shape and size, high quality and adequate information; Pay attention to proper selection of raw and optimization of all technological steps for developing and maintaining sensory quality, hygiene and health and nutrition field.
