Resumen:
Although the ethanol concentration of wine is considered the most important stress factor for lactic acid bacteria (LAB), low temperatures in the cellar is essential to develop starter cultures to ensure a successful malolactic fermentation (MLF).The aim of this work was to isolate LAB able to grow and consume L-malic acid at low temperatures. Study reveals that Oenococcus oeni and Lactobacillus plantarum were the dominant species among psychrotolerant lactic acid bacteria isolated from red Patagonian wines.
