Resumen:
Innovations in food packaging are constantly updating and always trying to create a high quality preservation system. The use of renewable resources for packaging materials, such as proteins or carbohydrates from biological origin is one of the main trends in researcher and industry (1). In particular, yeast cell is composed by proteins 40.5%, carbohydrates 40.2%, lipids 7% and nucleic acids 6.9% (2). It was described the development of biofilms based on β-glucan from yeast with promising characteristics (3). Yeast cell wall is conformed mostly by β-glucane and mannoproteins (2). The aim of this work is to prepare biofilms based residual yeast cell wall in order to develop a new system for food packaging.
