Resumen:
Edible films and coatings are thin layers of edible materials applied to the surface of a food to act as a barrier to the externalenvironment. They can be prepared using polysaccharides and/or proteins and can be used as carriers of bioactive compoundssuch as antioxidants and antimicrobials.Films and coatings containing antimicrobials can extend the shelf life of food, and there is a growing interest in theirdevelopment, in particular when dealing with edible materials. This trend is linked with consumer demand for high qualityand safer foods, the need to reduce the use of nonrenewable packaging materials, and the application of underused agriculturalcommodities.
