Resumen:
Chitosan is a polysaccharide obtained by deacetylation of chitin with potential uses in the pharmaceutical food and packaging area. Nowadays, the development of controlled release systems utilizes a large number of polymers, chitosan being a promising alternative for this purpose because it is known for its biocompatibility. The aims of this study were to analyze the effect of the addition of ferulic acid (FA) in chitosan films on the microstructural changes, through analysis by infrared spectroscopy, as well as physicochemical mechanical and barrier properties. Chitosan solutions were prepared with different concentrations of FA in the range of 25 to 100 mg/ g of chitosan. The addition of AF in chitosan films increased material tensile strength. The concentration selected was 50 mg FA / g chitosan, allowing the decrease of water vapor permeability and solubility determined at 100 °C by 35% compared to control films. The changes observed in the FT-IR spectra of chitosan films with the addition of FA evidenced the interaction of the active component with the matrix. The release assays indicated that the chemically active agent incorporated into the matrix was completely released into the medium conferring antioxidant properties to the developed films.
