Some physical properties of the seed sunflower are necessary for the proper design of equipment for process (handling, separation, dehulling, drying, mechanical expression of oil, storage). In the oil industry, the partial dehulling of the sunflower seeds constitutes a stage that originates relevant advantages such as a decreased volume of product to defat; a minor erosion of the presses, better quality of the oil (lower wax and pigments content) and better quality the extract flour (increase in the protein content). The objective of this work was to explore the variability of the some physical characteristics and the dehulling ability of sunflower hybrids grown in Argentina. Three black hull hybrids and three striped hull hybrids were grown at Balcarce, Argentina, using a randomized complete blocks design, with three replicates. The dehulling efficiently was evaluated by using a laboratory centrifugal process. Differences among hybrids were statically significant for volume and weight of one seed, hull thickness and content, true density, volumetric density and equivalent diameter (P< 0.01).
