Resumen:
Consumers´ demands for more natural and healthier beverages has developed a growing interest on emerging preservation technologies. UV-C light assisted by mild heat may be a good alternative to traditional Consumer demands for top quality and microbiologically safe beverages have promoted research on non-thermal preservation methods. Furthermore, there is industrial pressure to develop alternative methods that skip the sensory panel training step, gathering sensory information directly from consumers for the evaluation of new products.The aim of this work was to use the consumer profiling techniques CATA question and consumer field test to describe a carrot-orange juice blend processed by UV-C light assisted or not by mild heat, and to establish how much the proposed blend differed from an ideal beverage. Penalty analysis was conducted to reveal which juice attributes should be improved to increase juice acceptability. Moreover, a conjoint study was conducted to assess the influence of juice information in the health perception and willingness to try of consumers.
