Resumen:
Microbial exopolysaccharides (EPS), especially those produced by bifidobacteria and lactobacilli, are interesting metabolites that have widely proved to exert health benefits (in vitro and in vivo) and enhance the texture of different food matrices. Their chemical properties are unique, making them versatile to be applied as functional food ingredients with a double techno-functional role. The aim of this chapter is to summarize the most recent information regarding these properties, focusing on their potential application as ingredients, and not only on the producing bacteria. Although further studies are required to confirm the diverse effects associated with EPS, the current research that has been extensively carried out in this field seems promising, and encourages deepening the knowledge about these molecules.
