Resumen:
Casis (Ribes nigrum) is a fruit that has different bioactive compounds beneficial to human health. Treatments with enzymes improve these natural components extraction. Here, we treated Casis with an enzyme that combines pectinase/cellulase actions for 60 and 90 minutes. After these treatments, we obtained an enzyme treated Casis extract (FCE), which was characterized for antioxidant activity (AO) by DPPH radical inhibition reaction, polyphenols by Folin reaction which renders gallic acid content and anthocyanins concentration by differential pH method; we also evaluated FCE anti-adipogenic capacity on 3T3-L1 adipocytes.
