Dairy and vegetable-based foods both represent pillars of human nutrition, and their consumption is particularly warranted based on the multiples functional properties they carry on and the health benefits they confer. Scientific research supports the consumption of both dairy and vegetable products to sustain metabolic health. This is supported by their positive effects on the inflammatory and oxidative state and their contribution to the maintenance of healthy gut microbiota. The current higher demand for foods with a bonus in functional benefits has triggered novel dairy and vegetable-based foods with accurate targets. These new foods include fortified or enriched foods and fermented or probiotic foods, which assure essential compounds or improve health-promoting functions. This chapter summarizes some of these recent dairy and vegetable products under research designed to promote health and bring well-being. Particular focus will place on those developed to intervene in metabolic disorders like metabolic syndrome and related pathologies.
