Resumen:
The kinetics of the thermal degradation of the major carotenoids (b-cryptoxanthin and b-carotene) in cashew apple juice system was studied at 90 ºC by high-performance liquid chromatography with diode array and mass spectrometry detection (HPLC-PDA-MS). The decays of b-cryptoxanthin and b-carotene in the cashew apple juice system were well adjusted with a biexponential fitting equation corresponding to a kinetic mechanism with coupled reversible and irreversible first-order steps. The HPLC-PDA analysis of the degradation products showed that the isomerization of trans to cis-configuration was the main reaction induced by heat in these simulated juice systems.
