Resumen:
The design of a dairy plant and its associated processes is often an open-ended problem with many possible solutions. Each design solution may have a unique impact on production capacity, process control, safety, environment and economics. In conducting an engineering design project, several requirements relating to the following aspects must be met:   1.        Product (raw materials and quality of end product). 2.        Process (plant capacity, equipment, controls and cleaning). 3.        Economics (cost of production). 4.        Legal considerations (regulations relevant to process, equipment and safety).
