Resumen:
Environmental and social problems have induced the development of new packaging materials, which must be eco-friendly, intelligent and active, this in order to reduce the great losses of food and preserve the environment. Natural fillers and biopolymers have been studied the last years because they meet the requirements indicated. Likewise, nanopackaging is an emerging technology, booming that allows the development of new materials, thus allowing giving information to consumers about the quality and safety of foodstuffs. In this chapter shall be analyzed the basic concepts of intelligent and active films, and its development from composite materials of biopolymeric matrices. Finally, toxicological and legal aspects on the development of this type of composite materials will be studied.
