Resumen:
In this chapter, the potentiality of using a natural polymer (casein) and acarbohydrate (monosaccharides) as raw material to produce waterbornelatexes for coating applications will be presented. Indeed, casein is a subproductderived from bovine milk, easily available at high purity and with alow cost, while a substantial part of the carbohydrates commerciallyavailable in the food industry is regrettably wasted as a surplus of their196 Handbook of Waterborne Coatings agricultural production or through domestic wastage. Their valorization is an important issue toward more sustainable processes. Along this chapter,the importance of controlling the degree of compatibility between polymersby providing the biobased materials with internal (terminal) doublebonds during its modification (when it is required) to broaden the range ofpolymer characteristics and to improve their final application properties willbe emphasized. Finally, it will be discussed for the two considered systems,examples of their application as binders in waterborne coatings.
