Resumen:
Dulce de leche (DL), a concentrated sweetened milkproduct, is highly consumed in Latin America andexported to other countries, such as USA and Spain. DLis traditionally prepared by concentrating 3% w/v fatmilk with sucrose and vanilla until ~70% total solublesolids is reached, obtaining a minimum fat content of6% w/w. As DL is the most-consumed sweet spread inArgentina, particularly by children, it was an obviouscandidate for substitution with respect to saturatedfats.
