Sunflower Lecithin Hydrolysis by Phospholipase A1. Effect of Reaction System ML GOÑI, DT CONSTENLA, AA CARELLI PLAPIQUI (UNS-CONICET) The aim of this work is to study the effect of reaction system (pH, presence of calcium ions and solvent) on the sunflower-lecithin enzymatic hydrolysis by free PLA1 at 50°C using a reactor batch. The hydrolysis degree is determined by titration of liberated fatty acids. The free-fatty-acid profile generated by enzymatic hydrolysis is determined by capillary gas chromatography using the internal standard method.
