Resumen:
To elucidate the enzymatic clarification mechanism of apple juice, monoclonal antibodies (MAB) complexed to colloidal gold, were used to investigate the real surface structure of cloud apple juice particle. The application of these cytochemical tool showed that pectinase do not completely de-polymerize the pectin located on the particles, explaining why cloudy apple juice may remain as a stable colloid even at Zeta potentials lower enough to assure flocculation.
