Abstract: A simple process to achieve microbial stability of pineapple at ambient temperature during at least four mounths storage was developed. The process was based on the combination of a mild heat treatment, a slight reduction of water activity (aW), pH lowering and addition of potassium sorbate and sodium bisulphite. During storage at 27 ± 1ºC, color and texture changes, vitamin C losses and microbial stability were studied showing a product with good overall acceptability.
