Since enteral formulas (EF) are intended for patients at nutritional risk, it is convenient to formulate them using absorption enhancers and/or fortifying with good bioavailability iron sources. The aim of this study was to evaluate the bioavailability of Fe, Zn and Ca from experimental normocaloric and normoprotein EF, fortified with three different Fe sources: ferrous sulfate (FS), ferrous bisglycinate (FB) and FeNaEDTA. The bioavailability of minerals was estimated by the percentage of mineral dialysate (%DFe, %DZn, %DCa). EF fortified with FeNaEDTA had higher %DFe (17.05 ± 0.26%) than those fortified with FB and FS (14.40 ± 0.25 and 14.57 ± 0.31%, respectively), but for %DZn and %DCa no significant differences were observed. Furthermore, no significant difference was observed for Fe, Zn and Ca bioavailability of EF fortified with FS or FB. However, it should be noted that EDTA has a low Acceptable Daily Intake and that in our country, the use of NaFeEDTA as a fortificant is not allowed yet, as in other countries. It would be interesting further studies on this regard and considering the possibility of using this compound in some fortified foods.
