Resumen:
  Lactobacillus casei CRL 705 can release a bacteriocin, lactocin 705, active against Listeria monocytogenes. MRS broth was inoculated with spectinomycin-resistant (SpcR), bacteriocin-producing (Bac+) Lactobacillus casei CRL 705 strain and polymyxin B-resistant (PolR) Listeria monocytogenes strain. Viable counst of listeria decreased rapidly from 5 x 10 3 to 10 cells/ml, whereas its growth was not affected by a bacteriocin-negative variant of L. Casei CRL 705. The assessment of the bacteriocin effectiveness in a meal slurry showed that L. Monocytogenes did not multiply during the experimental period of time suggesting that lactacin 705 has a bacteriostatic effect.
