Resumen:
Abstract The objective of this work was to simulate the FOSs production in several pH and temperature conditions using a mathematical model developed by the authors. The effect of the temperature in the kinetic parameters of FOS synthesis was studied. The experimental data were obtained using the strain Aureobasidium sp. ATCC 20524. Bioproduction was carried out in a 1L stirred tank reactor. Results showed that the optimal values of the parameters appeared at 35 ¨¬C and were ¥â 5.001, ¥ã 3.841 and ¥ç 0.8.
