Book: The aim of the book is to provide an in-depth study of the principles of fermentation technology and recent advances and developments in the field of fermentation technology, focusing on industrial applications. The entire presentation has been divided in three section comprising 24 chapters from the eminent experts from all over the world. Part A is General and consists of three chapters on new tools for isolation and identification microorganisms, immobilization, microencapsulation, and nanobiotechnology and bioprocesses. Part B of the book deals with the Bioprocesses optimization, design of bioreactors and downstream processing and has six chapters which include Biosensors, Metabolic engineering and other methods for strain improvement, Fermentation media: design and properties, Bioreactors: Functions in fermentation processes, Statistical design for the optimization of fermentation processes, and Downstream processing of biological: a strategic approach. The third part of the book, i.e. Part C is on industrial products and bioprocesses and contains fifteen chapters. These are on Industrial enzymes, Fermented beverages: the example of winemaking, Production of organic acids: citric, glucosic and lactic acid, Production of vaccines and antibodies, Production of amino acids: L-ysine and glutamic acid, Production of fermented dairy products, production of mushrooms, Production of bioflavours, Production of bacterial and fungal polysaccharides, Production of biofertilizers, Solid-state fermentation, Biotransformations, Bioremediation, Aerobic environmental processes, and Aerobic environmental processes. The text is supported by numerous clear, informative diagrams. The book would be of great interest to the post-graduated students and researchers of applied biology, biotechnology, microbiology, biochemical and chemical engineering. Chapter: Selective conversions of the natural and/or synthetic substrates into useful products using the whole cells or isolated enzymes have been gaining increase relevance among the methods at the industrial scale. The enzymatic activity is often characterized due to its high chemo-, regio-and stereo-selectivity, which are very useful for the synthesis of the fine chemicals and intermediary molecular blocks. However, the success of a biotransformation at the industrial scale depends upon a series of factors such as the availability and low cost of the biocatalyst, efficient product recovery processes, competitive costs compared to the conventional methods, environmental compatibility, and lack of the pathogenic contaminants. This chapter highlights the general aspects of the biocatalysis, recent findings and new strategies about the modes of using the enzymes and fluids in the biotransformation field
