Resumen:
The Prosopis alba germ flour is one of the most outstanding proteins and polyphenols sources in arid and semiarid regions of Argentina. Up to the moment was demonstrated its nutritional and functional potential. They could be used as functional food or ingredient, or to pharmaceutical use for diseases correlated with oxidative stress and inflammatory process. Their potential use for such purposes increases the need for crop promotion and further development of optimum methods for extraction, analysis, and isolation of polyphenols and proteins. In Argentina, this legume tree is a kind of orphan crop, as it is in the group of minor crops of regional importance that have been neglected by the industry due to limited knowledge of its potential.
