Resumen:
Listeria monocytogenes and Staphylococcus aureus are pathogens of concern in the food industry for its potential ability to produce biofilms. This leads to serious health problems and economic losses. The biofilm serves as a reservoir for continuous release of bacteria processed foods in contact with those surfaces, as it is found that adherent bacteria are more resistant to the processes of cleaning and sanitizing allowing survival for long periods of storage and difficult to eradicate. In this context, in vitro studies were aimed, on production of bacterial films formed in monocultures (a bacterial specie) and mixed cultures (interaction of two bacterial species), and eradication of biofilms by new compounds with biological activities (1) obtained from commercial ketones as an alternative, compared to the action of chemical disinfectants commonly used.
