ACTIVE EDIBLE FILMS BASED ON GELATIN AND NATURALS OILS.

The objectives of this study were to determine the antimicrobial activity of oregano (Origanum vulgare) and lavender (Lavandula officinalis) oils against Gram-negative pathogenic bacteria (E.coli) in culture media and incorporate EOs into mammalian gelatin based films to obtain active edible films. Mechanical properties, water vapor permeability and the ability of the films to provide protection against E.coli contamination and lipid oxidation were analyzed. Results revealed that gelatin films incorporated with oregano essential oils have potential as active films against foodbone pathogens.
