Genome-scale metabolic model of Lb. casei BL23 reveals the role of redox balance in flavor formation

Lactobacillus casei BL is alactic acid bacterial widely used in dairy industries and is considered an archetypalLb. casei strain. A genome-scalemetabolic reconstruction was performed by using both manual genome annotationand the automatic ModelSEED program. The resulting model was composed of 851genes, 920 metabolic reactions, and 792 metabolites. Validation was performedsimulating cell growth on 20 reported carbon sources. More than 300 genes werereannotated in this model comparing our model with the recently published of Lb. casei LC2W. The model was used toidentify essential compounds growth and to gain system levels insights inflavor forming pathways from amino acid metabolism in Lb casei BL. Among the objective functions evaluated, the redoxbalance best explained the distribution of fluxes through flavor formingpathways in stationary phase for this bacterium.
