Resumen:
Problematic fermentations frequently drive economic losses and logistic problems in the 18winemaking industry. Previousfermentations, myces cerevisiaePDMthermal conditions leading to problematic 19 yeast strains for further transcriptomic analysis. Saccharo- 20 towards heat-shock, while 21 to select genes 22 expression to be later used as biomarkers for early detection of sluggish fermentation associated to 23 heat-shock. Candidate genes were selected from RNAseq data previously obtained. Alcoholic fer- 24 mentations were by 4 strains, SBB11, PDM, M2 and ICV D21. Heat-shocks on 25 36 and 40 °C for 16 hours. Cells of S. cerevisiae were 26 collected at different times after heat-shock candidate genes expression 27 over time. Three genes showed promising results. SSA1, MGA1 and OPI10, significantly increased 28 expression with respect to control. The selected genes showed increased expression during the first 29 9 hours post heat-shock and could be proposed for early detection of sluggish fermentations asso- 30 ciated with heat-shocks
